Observation: Raw hamburgers were stored over steaks and fish in the single door meat cooler. There were also pans of fish stored over vegetables and sauces in the walk-in cooler.
Correction: Store raw animal foods in order of descending hazard to prevent cross contamination (raw chicken on the bottom, then raw ground meats above that, then raw steaks above that then raw fish above that, then ready-to-eat foods above that). Separate raw animal food species from one another except when combined as ingredients.

Observation: Various food items in the top and bottom of the prep cooler are cold held at 46-58°F. Repair person was contacted during the inspection.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Correct By: 04-Mar-2015

Observation: An iodine test kit is not available for checking sanitizer concentrations.

Observation: There are ready-to-eat foods (lemons and lettuce) stored under thawing fish in the walk-in cooler. There are bags of raw ground meat for mushroom caps stored on top of a bucket of cooked noodles in the walk-in cooler. The walk-in cooler was rearranged during the inspection so raw meats were not above ready-to-eat foods.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
- CONSUMER ADVISORY (repeated violation)
Observation: No consumer advisory provided or the consumer advisory on menu is missing.
Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.
