Observation: No foods are being date marked.
Correction: Foods such as salsa, rice, beans, etc. must be marked with the date that they are made, then used within 7 days. Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- WALL AND CEILING COVERINGS AND COATINGS
Observation: There are small holes in the wall near the ware washing machine.
Correction: Fill these holes with silicon caulk. Provide wall and ceiling coverings that are smooth, easily cleanable and nonabsorbant.
- BUILDING CONSTRUCTION
Observation: The roof is leaking water into the back store room in two locations.
Correction: Repair roof so it does not leak water into kitchen.

Observation: Employee observed cutting fruit (oranges) with bare hands.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.

Observation: Prepared rice, beans, and cooked meats in coolers are not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Foods prepared and held for more than 24 hours must be date marked.

- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES (repeated violation)
Observation: A CHLORINE test kit is not available for checking sanitizer concentrations in dish machine and in final rinse of bar sinks. The QUAT test strips that you have here do NOT work for chorine (bleach type) sanitizers.
Correction: Provide chlorine test strips. for measuring the concentration of sanitizing solutions.
