The walk-in cooler in the basement has an air temperature of 55 degrees.
-Foods were transferred from the basement walk-in cooler to the kitchen walk-in cooler. And milk was transferred to approved equipment in the kitchen.
Correction: Provide equipment in sufficient capacity to hold food at proper temperature. Reduce food inventory or provide additional approved equipment.
- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
Observation: A quat and chlorine test kit is not available for checking sanitizer concentrations.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
- CERTIFIED FOOD MANAGER – REQUIREMENT
Observation: There is no Wisconsin Certified Food Manager for this establishment.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days.
- FOOD CONTAMINATION PREVENTED FROM PREMISE - NOT EXPOSED TO SPLASH AND DUST
Observation: Foods stored in the sandwich prep station, when the lid is open, are exposed to splash over from the sink being used as a handwash sink.
Correction: Store food in areas not exposed to splash, dust, or other contamination, or install a guard of some sort to prevent splashover from the handwash sink.

Observation: Sandwich cooler and basement walk-in cooler is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
- EQUIPMENT AND UTENSILS - CUTTING SURFACES
Observation: Prep cutting board located in the kitchen by the grill area has excessive scratching, scoring, and staining.
Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.
- LIGHT BULBS - PROTECTIVE SHIELDING
Observation: Lights located in the basement dry storage areas are not shatter resistant.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
- HANDWASHING SIGNAGE
Observation: No handwashing signage provided at the kitchen handwashing sink.
Correction: Provide handwashing signage at all handwashing sinks used by food employees.

Observation: No chlorine sanitizer was detected in the bar glasswasher final rinse.
Correction: Repair or adjust the machine to provide the proper sanitizer concentration of 50 ppm chlorine. Test the machine daily to verify proper function. Bar items wil be washed in the kitchen dishwasher until effective repairs can be made.
- Critical: SEWAGE - BACKFLOW PREVENTION
Observation: A direct connection exists between the sewage system and a drain from the food prep sink.
Correction: Provide airgapped drainage for the food prep sink.
- HAND DRYING PROVISION (corrected on site)
Observation: The towel dispenser was found empty at the kitchen handwash sink.
Correction: Provide single-use toweling or other approved devices at handwashing sink to facilitate proper handwashing.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: The walls and ceiling in the basement walk-in cooler are finished with painted wood. The paint is pealing in some areas.
Correction: Repair area or replace with approved materials. Walls and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent. Painted wood is not approved.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The ceiling over the dirty dish table is water damaged and pieces are missing. A leak reportedly developed during the winter and repairs will be made when the roof thaws in spring. The leak is not active at this time.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable. Repair the ceiling and roof as needed.
