Observation: Fresh whipped cream, tartar sauce (prepped onsite), leftover soup in Habco glass door cooler are cold held at 60, 59, 53°F, respectively.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Operator voluntarily discarded items and has already ordered a replacement cooler. Please note that this cooler is designed for non-potentially hazardous beverages only, and not for potentially hazardous foods. Do not use this cooler for potentially hazardous foods.
- Critical: TOXIC SUBSTANCES - CONDITIONS OF USE - USED
Observation: LTS 3000 is not being used according to manufacturer’s use directions in dishmachine in banquet kitchen. Chlorine concentration 10 ppm.
Correction: Dishmachine may be operated with chemical sanitizer or with booster heater for hot temp final rinse. Maintain chlorine concentration at 50 ppm for proper sanitizing or use heat for proper sanitizing (180 degrees F). Do not use dishmachine until proper sanitizer is provided.
