Observation: M3 Turbe Air 2 door reach in cooler is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Provide thermometer in cooler. Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
- FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
Observation: Food−contact surfaces (inside) of equipment (coolers, freezers) have encrusted soil accumulations.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Non-food contact surfaces (outside) of equipment (coolers, freezers, shelving) are soiled with food debris.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- PUBLIC RESTROOMS - HANDWASHING
Observation: Handwashing sink in public restroom does not have soap. Dispenser is empty.
Correction: Provide soap to support proper handwashing.

Observation: There are ready-to-eat food (cut vegetables) stored under raw shell eggs in walk in cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Operator moved eggs to bottom shelf
- IN-USE UTENSILS, BETWEEN USE STORAGE (repeated violation)
Observation: Plastic pint container used to dispense rice. Container is stored in direct contact with rice. Improper utensil storage.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F. Do not use containers to dispense food. Use utensils with handles (e.g. spoons, spatualas, etc).
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site) (repeated violation)
Observation: Wiping cloth used for wiping counters stored on table near steam table.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Operator set up bleach solution and put new wiping cloths in solution.

Observation: Fried rice in rice warmer is hot held at 108°F.
Correction: Maintain hot potentially hazardous foods at or above 135°F. Rice was reheated to 165 degrees F and placed back into warming unit. Warming unit was turned up.
- LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME (repeated violation)
Observation: Flour and other food items are stored in unlabeled container.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
- IN-USE UTENSILS, BETWEEN USE STORAGE (corrected on site) (repeated violation)
Observation: Plastic quart container used to dispense cooked rice. Container is stored in the rice. Improper utensil use and storage.
Correction: Provide utensil with handle. Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F. If stored on a clean surface, clean and sanitize the surface and utensil every 4 hours.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site)
Observation: (REPEAT) Wiping cloth used for wiping counters stored on prep tables.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Sanitizer buckets were set up and wiping cloths were placed into them.
