Observation: Cantaloupe salad on the buffet is cold held at 46°F.
(CORRECTED DURING INSPECTION) Employee discarded cantaloupe salad and replaced a new pan that is 40 degrees.
Correction: Maintain cold potentially hazardous foods at or below 41°F
- Critical: FOOD CONTACT SURFACES - WAREWASHING CHEMICAL SANITIZATION EXPOSURE TIME
Observation: Utensils in the mechanical warewashing operation are not exposed to the sodium hypochlorite sanitizer for the required amount of time. Test paper revealed a 0ppm result.
(CORRECTED DURING INSPECTION) Owner replaced the container of sanitizer, primed, ran machine multiple times and each time showed a 50ppm concentration.
Correction: Adjust warewashing operation procedures or equipment to assure utensils are exposed to the chemical sanitizer solution for the required time period.
- HANDWASHING CLEANSER AVAILABILITY
Observation: Soap not available at food employee handwashing sink.
(CORRECTED DURING INSPECTION) Handwashing cleanser was replaced.
Correction: Provide hand soap at handwashing sink to facilitate proper handwashing.
- PACKAGED AND UNPACKAGED FOOD - COVERED CONTAINERS OR WRAPPING
Observation: All foods stored in thew walk-in cooler were observed to be unwrapped or uncovered. Also all dry containers of food, flour and sugar containers, are not covered.
(CORRECTED DURING INSPECTION) All containers, dry and walk-in cooler items, were covered prior to the conclusion of the inspection.
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloth used for wiping counters stored on prep surfaces, not in a sanitizer solution.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.

Observation: Raw chicken is being improperly thawed by thawing at room temperature.
(CORRECTED DURING INSPECTION) Chicken was placed in the walk-in cooler for the remainder of the thawing process.
Correction: Adjust procedures or methods to properly thaw foods.

Observation: Cutting board on the cooks line has excessive scratching and scoring. Both sides of the board has excessive scratching and scoring.
Correction: Resurface or discard cutting boards or blocks with excessive scratching or scoring.

Observation: Food−contact surfaces of the can opener have encrusted soil accumulations.
(CORRECTED DURING INSPECTION) Can opener was cleaned and sanitized.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.

Observation: Non-food contact surfaces of the shelving in the walk-in cooler are soiled with a black dust and debris.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

Observation: Facility is re-using old food cans to store veggies in before they are cooked on the grill and other various food items in the prep cooler are also stored in re-used food cans.
CORRECTED DURING THE INSPECTION-Food in containers were immediately put in food grade containers and the old cans were disposed of.
Correction: Discard equipment and utensils that are not: corrosion resistant, durable, able to withstand repeated warewashing, smooth, easily cleaning, nonabsorbent, and resistant to pitting, scratching, scoring or decomposition.
