Observation: No chlorine was found in the dishwasher final rinse.
Correction: Test the rinse regularly and repair as needed so that there is at least 50 ppm chlorine available. A repairman arrived and made repairs during the inspection.

Observation: No test kit is available for monitoring sanitizer concentration of the dishwasher.
Correction: Provide a test kit to allow accurate determination of the sanitization concentration.
- PROHIBITING ANIMALS (corrected on site)
Observation: Two dogs were observed in the bar and dining room areas.
Correction: Animals are not allowed on the premises. The dogs were removed.
- CONTROLLING PESTS - INSPECTING PREMISE
Observation: Mouse droppings were found near the chest freezer in the pizza prep room.
Correction: Rountinely inspect facilities for insects and rodents. These droppings appear to be old. Carefully clean to remove them and ensure that appropriate control measures are taken if they re-appear.

Observation: Walls and ceiling found in poor repair, with mold and areas of soft wood.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent. Ms. state they have a person contracted to repair walk in cooler this spring as weather improves. Correct By: 01-May-2014
