Observation: A thermometer is not present in the prep coolers to measure ambient air temperatures.
Correction: Place a thermometer in the warmest part of the unit(s).
- EQUIPMENT AND UTENSILS - MATERIAL FOR CONSTRUCTION AND REPAIR
Observation: Food contact surface of the mushroom containers have holes punctured in them for aeration of the product. The food grade containers did not originally come with the punctures in them.
Correction: Discard equipment and utensils that are not: corrosion resistant, durable, able to withstand repeated warewashing, smooth, easily cleaning, nonabsorbent, and resistant to pitting, scratching, scoring or decomposition.
- FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
Observation: Food−contact surfaces of the pizza fork that is used to pop pizza bubbles has encrusted soil accumulations.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment. Wash, rinse, sanitize and drip dry the utensil ever four hours.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Non-food contact surfaces of the prep cooler handles are soiled with food debris and encrustations.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- HANDWASHING SIGNAGE
Observation: No handwashing signage provided at the front and the dishwashing area handwashing sinks.
Correction: Provide handwashing signage at all handwashing sinks used by food employees.
Handwash signs provided.
- POSTING OF PERMIT
Observation: Current permit is not posted in establishment in public view.
Correction: Post permit in public view.
