Correction: Maintain hot potentially hazardous foods at or above 135°F.

Observation: Drive thru cooler unit in is cold held at 53°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F
- PERSONAL CLEANLINESS - JEWELRY
Observation: Employee noted wearing jewelry on hands and arms while working with food.
Correction: Except for a wedding band or medical alert bracelet, prohibit food employees wearing jewelry on the hands or wrists while working with food.
- PERSONAL CLEANLINESS - HAIR RESTRAINTS
Observation: Employee noted working in cake prep area without a hair restraint.
Correction: Provide employees working in food preparation and cooking areas with effective hair restraint (hat, hair net, beard restraint, etc.).
- IN-USE UTENSILS, BETWEEN USE STORAGE (corrected on site)
Observation: Ice scoop to ice machine was improperly stored on top of ice machine.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: Wall above the ice machine is noted with exposed insulation.
Correction: Cover insulation with plastic and tape until the area construction is completed,or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
