Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) (repeated violation) Observation: Several food items in coolers are not properly date marked - bulk corn in large bucket, cooked rice in large bucket, au-jus, prime rib ends chimi-changa rice mix. Items were date-marked prior to end of inspection.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Correct By: 02-Feb-2015
Critical: SEWAGE - BACKFLOW PREVENTION (corrected on site) (repeated violation) Observation: An air-break exists between the sewage system and a drain from the food prep sink in kitchen. The food prep sink will not be used until the air gap has been installed per operator.
Correction: Design the sewage system in a manner that would preclude a back flow potential between the sewage system and the drain from which food is placed. Provide an air gap on the open site pee-trap rather than the air-break that currently exists. Correct By: 02-Feb-2015
