Critical: SEWAGE - BACKFLOW PREVENTION Observation: A direct connection exists between the sewage system and the drain from the customer self service ice machine near the salad bar. There is the potential for contamination of ice if sewage or sewage gas were to back up into the ice machine.
Correction: Remove the direct connection between the sewage system and the ice machine. Adjust the plumbing to allow an air gap between the two systems. Correct By: 17-Apr-2014
Critical: TOXIC SUBSTANCES - CONDITIONS OF USE - USED Observation: Quaternary ammonia sanitizer used in the wiping cloth bucket in the warewashing room is at a concentration of greater than 400 ppm.
Correction: Adjust the automatic sanitizer dispenser to dispense sanitizer at proper concentrations. Do not use the dispenser in the warewashing room until it is adjusted unless the concentration of sanitizer is able to be diluted. Correct By: 17-Apr-2014
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: The Delfield pass thru cooler on the serving line is at 44 degrees. The tapioca pudding in the unit was found to be at 47.0 degrees.
Correction: Adjust the thermostat of the Delfield pass thru cooler. Maintain the cooler at lower temperatures so that the food within the cooler will remain at proper temperatures (41 degrees or below) during all times of food service. If the thermostat is unable to be adjusted, repair the unit so that it is able to keep food items at proper temperatures. Correct By: 12-Apr-2014
