Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) Observation: Pulled pork in True prep cooler is improperly date marked. Pulled pork was dated past 7 days. There were a few other food items not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Pulled pork was discarded and the items not date marked were date marked at time of inspection.
Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site) Observation: The quat sanitizer is not being used according to EPA registered label use instructions and is at 0 PPM.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. Sanitizer for wiping cloths adjusted to 300 ppm at time of inspection.

PROPER COOLING METHODS - CRITERIA Observation: Improper cooling methods are observed for cheddar broccoli in Tall True Cooler. The cheddar broccoli soup was observed at 49F. The manager stated the soup was placed in the cooler at about 9:00pm the night before. The soup was placed in the steam table during the inspection for reheat to 165F.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.
TOXIC SUBSTANCES - SANITIZER CRITERIA (corrected on site) Observation: The quat in the sanitizer bucket was measured at 0ppm. The quat concentrated solution was replaced. The concentration was then measured at 300ppm.
Correction: Sanitizer shall meet the requirements under 40 CFR 180.940.
