Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.
Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site) Observation: CMA dishmachine is not properly sanitizing food contact surfaces. The operator set-up a manual sanitizing compartment and contacted a repair company to service the machine.
Correction: Clean and sanitize all utensils and equipment before contact with food.
WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES Observation: A chlorine test kit is not available for checking sanitizer concentrations.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.

Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) Observation: American potatoe salad and home made tartar sauce in large containers in True 2 door glass cooler and cooked rice in WIC are not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
HAND DRYING PROVISION Observation: No single-use toweling dispenser exists or other hand drying device available at handwashing sink for hand drying behind bar.
Correction: Provide single-use toweling or other approved devices at handwashing sink behind bar to facilitate proper handwashing.
FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR Observation: Several boxex and pans of thawing fish were is stored on the floor in the walk in cooler and onions and potatoes were stored on floor in back food prep area.
Correction: Store all food items 6 inches above the floor.
NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY Observation: The True cooler door tracks are not cleaned on a frequent basis.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
