Observation: In upright cooler, boxes of green peppers and oranges are stored on the same shelf as raw beef. Raw beef is not stored in separate pans in order to prevent meat drippings from contaminating other foods.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Correct By: 09-Jul-2014
- USING A HANDWASHING SINK - ACCESSIBLE
Observation: Handwashing sink in front counter area is partially blocked by a trash container, making it hard for employees to routinely and easily wash hands.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing. Correct By: 09-Jul-2014
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloth used for wiping stove area and in use fry pans are stored on the handle of the oven, and not rinsed or kept in sanitizer.
Correction: Cloths used for wiping clean equipement and food surfaces shall be stored in a sanitizing solution in order to prevent possible cross contamination. Correct By: 09-Jul-2014
- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - SELF DRAINING POSITION
Observation: Ice bucket in front counter area is stored in the upright position and not allowed to air dry in between uses.
Correction: Clean equiment and utensils shall be stored in a self-draining position to allow for air drying and covered or inverted. Correct By: 09-Jul-2014
