Complaint Details: Complainant visited the establishment on 4-17-09 and is concerned as employees were using bare hands to assemble
sandwiches. She observed an employee use finger nails to scrape out inside portion of bread and walk to the walk-in cooler to get a pickle and
came back holding the pickle with bare hands. She brought her concerns to the attention to employees who responded "we washed our hands".
Investigation Findings:
Talked to Mr. Wirth(owner) as well as Mr. Laubenheimer(manager) regarding the complaint.
The bucket with pickles is stored in one of the sandwich prep. condiment refrigerators.
According to Mr. Wirth the establishment's bare hand contact plan is in his computer(at home) and the original bare hand plan was given to our
department at the time of the pre-license inspection.
The employees were ordered to wear disposable gloves until the hard copy of the plan is provided.
The customers may request to have their sandwiches prepared with gloves.
Note: Bare hand contact plan(hard copy) has been provided and reviewed. Follow it accordingly.
I also explained that if during a routine inspection, I observe employees not following the bare hand contact plan, I have the right to revoke
their bare hand contact exemption plan.
This is a partial inspection due to a complaint to our Dept. stating on 9-8-09, 3 people were touching his sandwich with bare hands without
observing any handwashing going on.
Manager had the bare hand contact exemption plan on the premise for review. Manager stated that if a customer requests gloves, they will wear
them. Gloves were on premise at time of inspection.
I recommended they put a sign on the counter stating gloves will be worn upon request, so the customer knows they will have a choice.
The establishment is now using gloves. The bare contact policy is present in the establishment and reviewed.
Mop sink, employee handwash sink, three compartment sink and food prep sink present. A strainer is used between the food and sink. Bleach
is used as sanitizer: 100 ppm. Test strips available.
The following temperatures were taken:
Kairak prep coolers: both were 39 f turkey 37 f walk in freezer: 8 f walk in cooler: 38 f.
No violations found during this inspection.
