All PHF's must be kept at or above 135 degrees
Reheat food items to 165 degrees before selling to customers
Clean, sanitize and maintain food storage shelving, soda nozzles, food preparation table to remove food debris and mildew
Prepare sanitizer solution 100ppm chlorine
Repair handwash sink as to properly drain waste water.

Observed owner/operator washing hands at three-compartment sink and utilizing used wiping cloths to dry hands
Hand-washing must be conducted at hand-wash sink station only
Dry hands with single-use paper towels
Remove both soap and paper towel dispenser from three-compartment sink area and install at hand-washing sink area
Maintain stocked with soap and paper towels

Reheat food to reach 165 degrees
Provide a lid covering each individual hot pan in order to maintain temperatures at or above 135 degrees or if unit not operating, replace or repair as necessary
Observed numerous expired food products
Food items were removed from shelves and facility will return to get credit
All food items must be checked for expiration dates, rotate routinely
Prohibited to sell or give away expired/spoiled food
Set up sanitizer solution to sanitize dishes and utensils as part of the ware-washing procedure and to store used wiping cloths.
