- Observed bare hand contact in the kitchen with ready to eat foods. The facility used to use gloves but no longer use them. Per corporate preference, due to IL being a non glove state that they don't need to use gloves. Per IL code food employees shall avoid direct contact with ready to eat foods. I put the code in the comments. The facility doesn't have a bare hand policy. There is how to wash hands and where. Discussed a detailed bare hand policy. Wearing gloves is definitely preferred over using bare hand contact.
- There is buildup in the following areas: in between the salad prep area and the area with plates (in the kitchen), under the microwaves, around bread toaster, and the saute station.
- There is black buildup on the walls in the salad area and along the coving.

- The seals are broken on the reach in freezer with the fries.
- The dish machine behind the bar was 0ppm. It was run a couple of times and was still 0ppm. The employee behind the bar pushed the prime button a lot forcing the chemical concentration to be 50ppm. Explained they will need to run it normally again to check that the unit is maintaining 50-100ppm. They will use the 3-compartment behind the bar until the dish machine has 50-100ppm. The manager called EcoLab.
- There is buildup in the following areas: bread storage racks, the outside of the flour container, the air movers, the shelves that hold red plates, the bottom of the reach in freezer with fries, in between the salad prep area and the area with plates (in the kitchen), tracks of the cooler with cream cake, around bread toaster, and the saute station.
- The sink behind the bar didn't have paper towels.
- There is buildup on walls in prep areas, around the mop sink, and dish machine area. There is also an accumulation of dust in the ceiling vent by the back door.
- In the dish machine area there was a spray bottle of

- Found a large unlabeled container of flour on a shelf outside of the walk in cooler. It was labeled by manager during the inspection.
- Found cooked chicken wings in the grill prep cooler at 60F. Every other food in this unit was 41F or below. Per manager, these wings come in precooked and frozen and they thaw and cook them. The wings were discarded by the manager.
- Found no chlorine sanitizer in the dish machine. Maintain at 50-100 ppm. Manager ran the machine several more times and primed the sanitizer line until it was reading 50 ppm chlorine in each cycle.
- The kitchen counters, insides of reach in coolers, and stainless tables under the cooking equipment had a build up of grease and debris. Clean and sanitize these areas.
- The ice machine interior had a build up of pink debris. Clean and sanitize it.
- There were no paper towels at the dish room hand sink. Corrected-paper towels were refilled.
- Found build-up of debris on floors. Clean the floors.
- Mop was sitting in the bottom of the mop bucket and brooms sitting on the floor by the mop sink. Hang them up.
