Observed managers not wearing effective hair restraints.
By the registers, there were spray bottles of chemicals stored next to plates and cups. Also in the back prep area there was a spray bottle labeled glass cleaner stored hanging over the prep table. They were removed by the manager. Discussed making sure employees are trained that chemicals must be stored below and away from food and food contact surfaces.

Observed container of smoked pork with a discard date by 11/17 in walk in cooler. Manager voluntarily discarded pork. Observed container of grilled cheese sandwiches in reach in cooler with discard date by 11/17. Manager voluntarily discarded food. Observed container of vinaigrette salad dressing with no date label in reach in cooler. Manager voluntarily discarded dressing.
Observed reach in coolers in main cook line with no thermometer. Ensure all cold holding units are equipped with a thermometer. Manager put thermometer in reach in coolers on site.
Observed one employee bottled drink on lower shelf near drive up window. Observed another bottled employee drink in catering cooler, stored near food. Ensure all employee drinks have a lid and straw, and stored physically separately from food. Manager discarded both drinks on site.
Observed spoons not inverted on drying shelf. Ensure all utensils are stored inverted. Manager removed spoons from area and re-washed, rinse, and sanitized them.
Observed employees handling food in main cook line with no hair restraints. Ensure all employees have restraining hair restraints.
Instructed manager to run dish machine. The chlorine sanitizer concentration read approximately 0 ppm. Manager observed empty sanitizer bin and replenished it. Re-ran dish machine and chlorine sanitizer tested correctly at 50-100 ppm.
