- Observed a pan of Pico de Gallo in the walk in cooler with a discard date of 2/21. The manager voluntarily discarded the food during the inspection.
- Observed various foods in the standing True cooler and freezer uncovered. Food should be covered at all times during storage.
- Observed the shelves for drying to be rusty. Repair/replace.
- Observed the top black microwave with food debris build up. Clean and maintain routine cleaning.
- Observed the handles of the reach in coolers and drawer coolers along the kitchen cook line with debris build up. The standing reach in True cooler and freezer has food debris build up in it. Clean and maintain routine cleaning.
- Observed a broken piece of coving by the back door. The seal of the coving along the wall at the end of the cook line is peeling off. Repair/replace both areas.
- The floor of the kitchen cook line contained food debris, particularly around equipment and along the walls. Clean and maintain routine cleaning.

- Observed 2 flat crates of shell eggs at 44 F. The manager voluntarily discarded them during the inspection. There was a container of eggs yolks at 44 F that were voluntarily discarded during the inspection. Temperature documentation has been kept on the cooler and shows it has not been having issues. Per the manager the cooler was going through a defrost phase.
- Observed two cooling units in the facility without thermometers. Thermometers were provided during the inspection. All cooling units should have a thermometer.
- Observed forks and spoons stored upright. Utensils should be inverted so the least amount of manual contact is made with the consumer.
- Observed the manager use wet hand to turn the faucet off when washing hands. I spoke to the the manager about proper hand washing. Specifically about using paper towels to turn the faucet off to avoid cross contamination.
- Observed the handle broken on the up right cooler/freezer in the grill area. Racks in the walk in cooler were rusty and had black fuzzy build up. Replace or repair.
- Observed debris build up on the handles and seals of all the reach in coolers in the grill area as pointed out to the manager. The drawer cooler under the grill has grease build up under the drawers. The cooler holding eggs has liquid build up in it. Clean, and maintain a routine cleaning schedule.
- Observed food and food debris build up on the floors around equipment in the grill area. Clean.
- Observed a ceiling tiles missing near the grill area. Ceiling tiles above the ice machine have heavy dust accumulation. The ceiling tiles were told to be taken down and cleaned during the inspection. Clean and maintain routine cleaning.
- Observed employee personal items such as a pack of cigarettes, cell phone charger, and jacket in the kitchen on food and food contact surfaces. Personal items should be kept separate from food and food contact surfaces.
- Observed a can of RAID insecticide stored in a cabinet with napkins and other food contact surfaces. The manager threw the can away during the inspection.

- Found pre-cooked steak pieces and cartons of egg whites in the stainless 1-door, 2 drawer under counter cooler on the South side of the cook line at 53F and 48F. The cook stated that this unit had been having trouble holding temperature. All potentially hazardous foods in this unit were discarded. Do not use this unit until it has been repaired and can maintain food at 41F or below. Contact TCHD (Kim) when repaired for a re-inspection. Found sliced tomatoes in the in counter cold wells on the southwest side of the cook line at 51F. They were discarded.
- Found cracked plastic food containers on the clean dish shelves. Replace these containers with new ones.
- Fix the broken door latch to the walk in cooler. Replace the caulk around the dish washing area walls that has become dirty and black.
- Found wiping cloths sitting on counters in the kitchen (cook line). Store wiping clothes in sanitizer between uses.
- The kitchen counters and shelves, soda nozzles in the wait staff area, and insides of coolers and freezers had a build up of food debris. Clean and sanitize these areas.
- The grills, stoves, fryers, toaster oven, and microwave interiors had a build up of grease and debris. Clean and sanitize these areas.
- The outside of the dish machine and pipes in the kitchen had a build up of debris. Clean and sanitize these areas.
- The drain under the 3-compartment sink is leaking. Repair it.
- Replace the cracked floor tiles in the kitchen (cook's line).
- Found build-up of debris on floors. Clean the floors.

- Found potentially hazardous food in cold holding at above 41F. Maintain at 41°F or below. Sour cream in the waitstaff under counter fridge was at 48°F. All other foods in this unit were 41°F or below. It was discarded by manager.

- The ice machine break shield had a build up of black debris. Clean and sanitize it.
