Shellfish, milk, eggs held at room temperature rather than 45 degrees F or below as required. Two cartons of eggs observed stored at room temperature. Product was removed from shelf.
Hot Water Sanitization Temperature, & Chemical Sanitizing Using Detergent-Sanitizers in Manual Warewashing (46.676(d)(e))
Observed no chemical sanitizer being used on equipment and utensils after washing and rinsing them, and prior to use. Hand washing sink is used for wash/rinse/sanitize purpose. 3 basin sink observed not present. Establishment has a meat slicer amd slices deli meat.
