Product heated originally ~30 minutes prior, Inspector allowed for product to continue to be heated to proper temperature and place back in hot table maintaining >= 140 degrees while in hot holding. Corrected. 8A--Product in walk-in cooler and walk-in freezer is not stored >=6"" off of the floor to make floors easily accessible for cleaning. Repeat. 10B--Door gaskets of cooler on cook-line are torn. Repeat.

04/07/2006Inspection5A - Bowl of mashed potatos on counter - 50 degrees - was told he could heat in microwave and forgot to put back in cooler. Not out more than 1 hr. Corrected - put in walkin. 6A - Meatballs in steamtable - 110 degrees. Had been heating in steam table for over 2 hours - voluntarily discarded at this time. Corrected. new meatballs heated on stove to > 165 degrees. 8A - Cooler in waitress area (temp 45 degrees) has a problem with the door closing properly, the green salad bin holds the door open. Spoke to waitersses working this area and diacussed the need to make sure the door is closed properly. Corrected 8 E - 2 coolers in waitress area have no thermometers.
