1/9/2012 | Standard2 | PIC was Stephanie and Evelyn Three accurate long stem thermometers were available for use. Menu was discussed with PIC, this school is occasionally reheating foods in bulk. This operation will be changed to a Risk level 3 for the 2012-2013 licensing season. Clerical staff with this office was contacted today and changes were made to the application. Be advised one menu item per week is permitted to be reheated in bulk. Reportedly, foods are properly cooled under refrigeration, while uncovered/vented, to assure proper cooling parameters are met. HOLDING: Observed the food items with a asterisk in the temperature log below were holding at improper temperatures. Maintain potentially hazardous foods at 41°F and below to limit the growth of organisms. |

Maintain potentially hazardous foods at 41°F and below or 135°F and above to limit the growth of organisms. Discussed relocating these food items into hot holding equipment, or discussed using time in lieu of temperature procedures for these items. PROTECTION FROM CONTAMINATION: Observed the raw shell eggs were stored above the bagels in the Drawered refrigeration unit and the raw shell eggs were stored above trays of portioned peppers and onions in the walk-in cooler. Different types of raw animal foods shall be stored separate from each other and other raw or ready to eat foods to prevent cross-contamination. |
