  • - Olive Bar contained mozzarella cheese mix 43°F, Blue cheese stuffed olives at 41-48°F and Greek feta salad 43°F
  • Refrigeration unit and foods shall be maintained at 41°F and below to limit the growth of organisms. Foods holding above 45°F and above shall be discarded.
  • R/4.5 Clean and repair the ice accumulation in the deli walk-in cooler on the floor, condenser line, and the ceiling.
  • 4.4 Repair the damaged duct taped handle on the Vulcan oven.
  • Discussed cooling of whole turkeys with PIC.

  • 6.2 Repair the non-functioning light fixture in the seafood case.

  • R/*901:3-4-15 Observed the following expired baby food items: 14 cans of Enfamil Lipil dated 12/1/11, two containers Gerber
  • Organic Green beans dated 12/1/11, and two containers Gerber Organic Banana Raspberry Oatmeal dated 12/1/11. Check and rotate stock regularly remove expired product from the sales floor.
  • *7.2 Observed bleach and laundry detergent stored above coffee and juices in the rear storage area, also a variety of chemicals were stored above Ziploc bags on the back stock racks. Toxic chemicals shall be stored in a separate designated area from food and equipment to prevent cross-contamination. PIC instructed staff to relocate these chemicals today.
  • 4.5 Interior of the keg coolers are soiled. Clean these areas
  • Discussed reusing egg boxes for back stock with the PIC.

  • No violation were observed in this area today.

  • BAKERY:
  • 3.5 Bagels, rolls and muffins carts/racks were lacking ingredient log. Provide a log or book with the ingredients in descending order, name of the food and the manufacturers name and address. Log book was relocated to the cart with the bulk bakery items.
  • 6.2 Provide a hand washing sign at the hand sink in the rear bakery area, to inform employees where to wash hands.
  • C/4.1 No thermometer was available in the refrigerated bakery case. Provide an accurate thermometer to assure 41°F and below is maintained.
  • 4.4/4.5 Observed the three door Hobart unit was holding at 43°F, but the cakes were holding at 15°F, also observed ice accumulation coming from the condenser and accumulation on a tray and rack in the second door in this unit. Clean and repair the ice accumulation. Monitor this unit to assure 32°F and below is maintained.
  • 6.1 Provide light shields on three of light fixtures in the bakery refrigerated case, to prevent contamination.
  • 4.5 Clean the floor surface under the fryer.

  • - Kraft foods cooler with packaged cheese and cream cheese was holding at 46.3°F. This unit was adjusted today.
  • - Olive Bar contained Provolini Antipasti 48-50°F, and Greek feta salad 47°F
  • - Deli//bakery display unit contained cream cheese with strawberries holding at 52.3°F
  • Refrigeration unit and foods shall be maintained at 41°F and below to limit the growth of organisms. Foods holding above 45°F and above shall be discarded.

  • *3.4 Observed Dilly Asparagus salad was dated 7/19/11, and Tomato mozzarella salad was dated 5/19/11 in the walk-in cooler.
  • Foods shall be dated the day of preparation and shall be used or discarded in seven calendar days. Properly date these food items.
  • MEAT:
  • *3.2 Observed raw pork shoulder picnic ham with ready-to-eat hams and raw pork jowl bacon was stored with smoked boneless cottage ham in the meat area. Different types of raw animal foods shall be stored separate or not above ready-to-eat foods to prevent cross-contamination. These foods items were relocated today.
  • BAKERY:
  • *3.4/4.4 Refrigerated bakery case contained an air temperature of 45-47°F and the cream stick in this case were holding 47°F.
  • Refrigeration unit and foods shall be maintained at 41°F and below to limit the growth of organisms. Foods holding above 45°F and above shall be discarded.
  • 4.4 Repair the damaged door seal on the left door of the 3 door freezer unit, to provide a cleanable surface.

  • *901:3-4-15 Observed the following expired baby food items: One can of Similac advanced formula was dated 10/1/01, Nine cans of Enfamil Lipil was dated 11/1/10 on the discounted rack by the dairy department. Check and rotate stock regularly remove expired product from the sales floor.
  • *7.1 Observed Charcoal lighter fluid and BBQ grill cleaner above utensils in the seasonal aisle and health and beauty aid products above containers on the reduced rack by the restrooms. Store toxic chemicals in a separate designated area from food and equipment to prevent contamination.
  • 3.5 Observed price tags were coving the expiration dates in the baby food items on the discounted rack. Relocate price tags.
  • 4.8 Observed foil and plastic wrap displays were store on the floor across from the deli case. Store equipment six inches off the floor to facilitate cleaning and to prevent contamination.

  • *4.1/2.4 Observed the temperature measuring device was reading 22°F when placed in an ice bath. Temperature measuring devices shall be accurate within +/-2°F to monitor temperatures of potentially hazardous foods. This device was calibrated today.
  • 4.4 Repair the container with the duct taped lid, to provide a cleanable surface.
  • 4.4 Resurface the wooden syrup storage cubes to provide a cleanable surface.
