Cold Hold (41 F/45F) Observed Church's cooler holding raw chicken off temperature. Removed chicken from cooler and placed in a working cooler. Potentially Hazardous food such as raw chicken should be held at 41 degrees F. Chicken which temperature was above 41 degrees F was denatured and discarded.
Proper/Adequate Handwashing Observed employee wash her hands for less than twenty seconds before continuing food preparation. Observed employee use cell phone then during food prep and change phone to speaker phone then continue food prep with out washing her hands. Employees should wash their hands for at least twenty seconds before and after food prep and they should wash hands and exposed portions of their arms vigorously.
Approved Systems (HACCP Plans/Time as Public Health Control) Observed in the Pizza Inn food being stored in the cooler without the proper dates being marked on the food. Food that is stored for longer than 24 hours should be labeled with the proper date. Observed sausage being stored with out date.
Manager Demonstration of Knowledge/Certified Manager Observed no Certified food manager on duty during operating hours. A certified Food Manger should be on duty during all hours of operation.
Good Repair Observed blender container with deep crack and duct tape being used to repair crack. Food equipment should be in good condition. Observed cutting board with deep melted gashes with food residue embedded into the cutting board. Food equipment should be clean frequently and easy to clean and free of debris. Observed rolling pin and measuring cup being stored in drawer with food residue still on the rolling pin and on the inside of the measuring cup.
