| Handwashing Facilities Adequate and Accessible Observed a container being stored inside the hand washing sink in the kitchen near the hot hold display. The hand washing sink must remain accessible at all times. Corrected on site. |
| Handwashing Facilities With Soap and Towels Observed hand washing sink without soap or paper towels in the kitchen at Church's. Soap and paper towels must be in adequate supply at all times to prevent food contamination. |
| Manager Demonstration of Knowledge/Certified Manager No certified food manager was on duty at the time of the inspection for both Church's and Fish Place. A staff member of Church's indicated her certification recently expired. A certified food manager must be on duty during all hours of operations to comply with state regulations. |
| Thermometers Provided/Accurate/Properly Calibrated (2C) Observed a missing thermometer in the front preparation cooler storing cheese (church's). Also observed missing thermometer in front preparation cooler storing cheese and cut tomatoes ( Fish Place ). Any cooler storing potentially hazardous foods must have a thermometer to ensure the required temperature of 41 F or lower. |
| Food Establishment Permit Food establishment was conducting business without a permit. All restaurants are required to obtain a Food Establishment Permit to operate in Harris County. Establishment conducted a change of ownership without notifying our office. See notes below. |
| Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized Observed food containers with visible food residue. Management indicated the dishes were previously cleaned. All food contact surfaces must be cleaned to sight and touch to prevent contamination. |
| Good Repair Observed a cracked ingredient scooper stored in the flour container in the kitchen at (church's) Also observed two metal fryer baskets in need of repair being stored near the back storage area. |
