Is that a trick question? They can both be correct - "printer's" can mean the "printer's store" and "printers" can be a collection of printers at a specific location.

I still feel as if I am left dangling when the modified word is left out. Are you going to the Baker home? Their office? Their Christmas party? Should it be the Bakers' ? The Bakers's?

That may be so, but it's still grammatically correct. However, you are right, it's the Bakers' house . "I'm going to the Bakers' house to see John Baker's photo."

There is a local medical office that is The Physicians' Spine and Rehabilitation Specialists. I cringe every time I see it. Does that mean they only treat physicians?
A number of family businesses went through a series of names as they reincorporated next generations linto the DBA names. They had to keep the apostrphes moving around as the identity of the owners changed.
Wilson Brothers' (Two Wilson brothers)
Wilson's (one brother died)
Wilson and Son's (one son in the partnership)
Wilson and Sons' (both sons in the partnership)
Wilson's Sons' (Dad died)

1 and 4 are implying that Jerry was on his way to meet either one printer or more than one printer, at no specified or implied location. - So he was going to meet people, as a priority.
2 and 3 imply that Jerry was on his way to the location where he would find either a printer, or more than one printer. So in this the priority was to get to a specific location, and not necessarily to meet anyone at all.
