Canada has size covered, but I think for it's size it lacks diversity. Culturally I find it a like a dulled down version of America; what would interest me would be Quebec, particularly Quebec City, and the Inuits of the north. The Canadian Rockies are majestic and the Maritime provinces interesting.
Mexico, on the other hand, has huge volcanoes, ancient Aztec ruins, stunning beaches, and a really cool culture. I still imagine it being like an old Western movie or something, the broad, brown vistas, canyons, quaint pueblos with hombres taking siestas wearing sombreros, vibrant parties and mariachi bands, the bustle of modern Mexico City.

Since you have never been to Canada, the USA or Mexico how can you make blanket statements such as the above?
If you ever make it to Toronto where 50% of the populations was born OUTSIDE Canada I think you will change your tune about your perception of the (lacking) diversity in Canada. Even in Montreal when you walk on rue St-Denis you will be surprised that even Quebec is not all Francophone. Drive through Richmond, BC or through Vancouver and yet again.. diversity. Its a lot more diverse IMO than Oz.

I was referring to geographical diversity as well. Culturally, I think it's similar to Australia. Actually it has slightly less overseas born, but on the whole may be more diverse. Toronto doesn't interest me that much, to be honest, although I'll still visit if I go to Canada.
The 2 countries are fairly similar linguistically, culturally, historically and resource based. That didn't stop wealthy Aussies from owning the most desired and expensive properties in Whistler and Big White.
