The lady who cuts my hair tells me she works 8 hours a day 7 days a week. She is only off on Thanksgiving and Christmas, the only two days the salon is closed. She says she can't afford any other option.

I did it for a while, years ago. I had two jobs, one nearly 40 hours per week and the other far more part-time. Between both of them I often worked seven days a week, and it was not uncommon for my days to average out to eight hours each or even more, and for me to go several weeks without having a workday of under eight hours.
However, I've never done that with one single job.

I used to work 9 shifts a week one year while in school full time
1 day job, 1 night job, and school either 2 days a week all day or 3 days a week.
Most hair dressers are self employed. If she wants the income, she will work. Plain and simple.

Many people have worked relentless schedules due to necessity, Sometimes combining school and raising a family even. it's draining but with (Somewhat) proper sleep, hydration and nutrition healthy adults often can carry on for a good while.
I was in the ER a few days ago and thought about doctors and nurses during their residency and the grueling schedules and work they do that leaves no room for error as lives are often at stake. People are often strong and human ambition, resistance and spirit can be incredible.
For a while, my Dad worked 10-hour shifts, 7 days a week at a factory. Those were boom times, 1.5x pay on Saturday, 2X on Sundays, 3x on holidays -- hard to pass up that kind of money when you've got a young family. I think he may have done that for a year or so.
I've done it, but never every week. I did it during college, working 2-3 jobs. I used to work a FT job, and do part time gigs, things like that. It was worth it at the time, but not so much these days.
Anyone who has ever run their own business has worked 7 days a week, especially when first starting up. When you aren't working, you're looking for work. When you are working, you're looking for more work. And when you find work, you're looking for more work to do after that.
