I was just informed by my co-worker that some McDonald's managers are pulling in $60K/year.
Is that really true? If so, why is McD's seemingly always looking for managers?!

Hours are long, and depending on where you live that wont supply you with a decent living. Not sure but that is my guess.
I believe the hours are long and the work is grueling. Also, I would find it hard to believe that that is a starting salary. Maybe after 15 years on the job, and can you imagine doing that job for 15 years.

Yeah, I'm assuming 50-60+/hour weeks. However, in this economic climate, I would think there'd be lines out the door for a job paying that. I mean, I live in Louisiana, where $60K will afford a solid middle class lifestyle.

I worked at McD's when I was a teenager, and it is definitely true that it's grueling. However, there are lots of jobs which are grueling and don't pay that well.
There are GOOD shift managers making that kind of dough and more...
There are folks working at busy, well run McDonalds in locations that have high "all day volume" and sales numbers in the top tier of all locations (think airports, tourist destinations in Chicago or NYC, large shopping malls, outside regional attractions..) making six figures as a shift managers. The owners are happy to have these people running their stores where the GROSS is in the multi-million dollar range...
Managing a McDonalds is a hard job. A lot of people probably don't think $60k is worth it. It also requires a significant amount of experience and training in the industry... something that other $60k jobs don't necessarily require.

OK I take your word for it, since it sounds like what you do.

Manage a McDonalds? No. I don't work in fast food. Never have. I'm an avid reader of HBR. McDonalds is almost overused in case studies.
