I'm looking for a good (town/city) with low population, a lake, ranch style, where theres rodeos, mostly Caucasian people, able to raise a family, walking distances to places, fun things to do, a house with a deer lease. Practically a place where everyone knows each other. With low rate of crime.

How can you live in a house with a deer lease and be within walking distance of "things"? If it weren't for some of the rather exacting criteria I would recommend Stephenville.

I have all that but the lake and the walking distance ... but I got a couple of pickups for that! 45 minutes to the largest lake in Texas. (I have a 2 acre pond and a creek full of fish though).

Wow! We're looking around for a similar-type location, but not quite with all those criteria, I think.
I lived around Central Texas for nearly 30 years, and never did find a place that has all the attributes you listed ... NOT to say that there isn't a place like that!
When we finally get our backsides back-to-TEXAS, my biggest fear is that everything will have become so popular, that it'll be too costly (for retirees like us) to be able to live there, any more. We figure (maybe wrongly) that living in a small town will be cheaper than living in a Texa-politan area. But, if more and more people are relocating there, small towns will also feel the 'pressure' of increased population, and with that will come an uptick in the CoL there. Right??
It's (already) not lookin' good for our "plans" ... So, if any of y'all have a different insight about it, please enlighten me, so we can adjust our "Plan" to consider others' ideas, too.

Many Thanks, Y'all!

Llano, maybe. River rather than lake (though lakes are not terribly distant).

Agree with ya, Doc ... Only problem I have with Llano, or even Kingsland, or some of those other river towns, is that the "river" doesn't flow all-year-long. I'm subscribed to a City of Llano blog that occasionally puts out warnings about different levels of water rationing, and have seen pictures of the trickle (they call it "flow") of the Llano River through town. It hasn't been a pretty picture.
But, don't get me wrong; I really "Like" the Llano area. It's far-enough out in the Hill Country that it's still a small, quaint, old-timey town, but easy-enough to get back to the Austin Area to catch a plane, meet-up with old friends, or visit my Family.
But, I don't think anyone would want to do a daily commute from there. Of course, YMMV ...

Thanks for letting me comment on here.

Are you familiar with East Texas, Holly Lake Ranch north of Hawkin, 8 miles and Tyler about 30 plus miles?

Holly Lake Ranch private gated community non incorporated with about 2,800 population really beautiful if you like lots of trees and mean "big" pines and oaks, small lakes nice golf course great security. But if you like no dues I live 3 miles closer to Tyler, in a small quarter to half acre lots, no dues, smaller to larger homes, mine white vinyl fence, side garage, 3-2-2 1580 or so sq ft. lots of oaks with nine large/tall pines. house 12 years old. really open concept with some tall/boxed ceilings, will put it on the market about April 1st, have not bought a camera to put it online, which I guess I will have to do, will sell it myself. Anyway really nice place about 10 to 12 retires in the sub. many in the area. Tyler really has most of the shopping most people need, Dallas 1 1/2 hours away for all the major, major stuff.

Good Luck
