What do you mean by Wrong Clientele? My family loves local butcher shops...my mom always got her special occasion meats from Fischer Meats in Issaquah, and when my husband and I lived a little further north, we stopped in Butcher Shop Cafe in Kenmore frequently. Bellevue is generally very pro-small business; many of the people eating in the chain restaurants at the mall are from out of town, either there on business or from surrounding suburbs. In the case of Bill the Butcher, we just had no idea it was there! No advertising, and not in a location where people go food shopping; the previous occupant of the space was a paint store that had been there for decades.

I get very defensive about Bellevue because I find many people who make negative statements about it have spent very little time there. My family, on the other hand, has spent a lot of time there...since the late 1800s to be exact. Bellevue may have a bunch of new buildings downtown, but it is not a new town...it's a very misunderstood place.

Oh my goodness... no idea how I forgot about Golden Steer in Bellevue/Redmond (right on the border on, natch, BelRed road). It's my favorite butcher shop in the area, and I do everything I can to avoid the Eastside during non-work hours.

It is a REAL butcher shop, with incredible selection and attention to detail. Highly recommended.

Yep - I <3 the Golden Steer! They are some of the friendliest, most helpful folks on the planet and their selection is always so well done. I also like A&J Meats and Seafood on top of Queen Anne hill.

The problem wasn't the clientele or the advertising - the problem was they were charging a ridiculous sum of money for their meat, half their store wasn't even dedicated to meat, there were better options to purchase from, and their selection wasn't that good in the first place.

Dedicated butcher shops in the region worth checking out include Golden Steer, Don & Joe's Meats, and the Swinery. Bob's Quality Meats in Columbia City hasn't been any good since Bob died - the last couple things I have gotten there have been subpar, and the last thing I got there (a brisket), the woman behind the counter intentionally hid a huge problem with the meat when she was showing it to me. Fischer is overpriced and underquality. The remaining Bill the Butcher locations have the same issues the one in Bellevue had.

I used to go to the one in Pike Place Market for freezer packages, the meat seemed tastier than supermarket meats (I don't know if that's good or bad). For cured meats like German sausages, authentic liverwurst, hams etc you can't go wrong with Bavarian Meat Products, which is in the Pike Place complex. Try their landjager.
