80/20 ground beef mixed in with some ground pork, I would say 1 pound of each. 2 eggs, 4 cloves minced garlic, 1 tsp. Italian seasoning, 1/4 cup grated parmesan or Romano, 1/3 cup seasoned bread crumbs. Mix with hands and roll into balls about golf ball size. Bake on 350 for 25-30 minutes. Buy a nice crusty Italian bread, I like semolina. Depending on the size of your sub will depend on how many meatballs. For a 6 inch sub I say 4 meatballs and for a 12 inch put 8. Slather the meatballs with your favorite red sauce or if you have homemade even better. Place slices of provolone or sprinkle mozzarella on your sandwich. You could also place your sub in a Panini press or place sub on a baking sheet and bake at 350 until cheese melts.

Fresh flat leaf parsley is great and a little fresh basil too.

I do 60/40 ground beef and pork. You could also do 1/3 each beef/pork/veal. Fresh parsley, lots of chopped garlic, freshly grated romano cheese, bread crumbs, egg enough to mix easily, about 1 teaspoon of salt to a lb of meat. If you put them into a tomato sauce to cook, the pork makes the sauce better. Also I put in a little dried basil. For the sauce, brown them in a skillet before putting them in the pot. You can brown Italian sausage and put that in too.
Because we like salt, I will fry little tiny meatballs until done and taste to make sure there is enough salt.
