I have a 12x23' workshop off the back of my garage that I am planning on renovating myself. Currently it is just studs with pegboard on them.
My plan was to insulate it with fiberglass batts (studs are 2x4's 16" o.c.) and use 3/4" OSB as interior sheathing for the walls, and then probably just paint it. Is there any problem with using plywood/OSB as a wall material in a workshop from a code perspective?
The workshop also shares approximately 4 feet of wall with the house, I had heard about firestops between house/garage so was planning on using 5/8" gypsum board in that particular location for a 1 hour firestop. Any thoughts on this?

I would call the Wake Co. building inspections/permits office. They have always been very helpful when I have contacted them with a specific code question.
I see workshops done like you are thinking all the time. It's nice to be able to attach things to the walls where ever instead of finding a stud. I also think that the 5/8 drywall is a smart idea where the shop shares the wall with the house.
That should be just fine, but definitely talk with the permitting office. It is a small fee for a permit, but they are there to help and it may save you a tangle later when you re-sell the house.
