kelly237,
If you are still looking for a new kayak, the Great Outdoor Provision Company is sponsoring a kayak demo on Thursday, May 24 from 4-7pm at Lake Crabtree County Park. (They also have dates in June and July.) Call ahead to register and make sure that they bring the model that you are interested in trying out.
I've been looking at giving this a try myself, but was appalled at the $$$ rental rates for kayaks. You can buy a nice used one for the cost of 4 rentals.

There was a great Groupon offer just the other week for rentals from Paddle Creek. I got one for 50% off the rental. Keep an eye out, I'm sure there will be other deals in the future.
Frog Hollow has a travelling outpost that has pretty reasonable rental rates - $30 for 3 hours I think? $40 for 6? They are selling out two weeks in advance though, so book early.
That said, I bought a kayak almost immediately because I knew I was going to be paddling a lot - and I've been out a dozen or more times since last November.
