I think I'd get sick if I did an air to air, I can fly alright, but turns and up and down gets me sick.

I just want to do some with the planes coming out of the clouds and such. No over and under stuff. I know I have to be in a plane rated for an open door or window.. I want a gyro so I can slow the shutter down and get the perfect prop blur with the plane sharp. Plane speeds must be in sync too. I think shooting down form ahead showing the pilot(s) would be so cool.

Check with the flight schools in your area... I'll bet you 100 to 1 they can help you out... bet ya one of the instructors has already done some of this stuff... they can be crazy when they get bored!
