I have Toddler Teach Me which is great! Teaches letters, numbers, shapes, phonetics, colors, counting and more. You can adjust the learning level and keep track of stats of how your kid is doing.
We also have a few silly talking animal apps that are just fun and giggle inducing. Talking Carl, Talking Tom, and Baby Hippo. They laugh when you tickle them, repeat what you say in a silly high pitched voice and do a few other things that generally send my daughter into uncontrollable fits of laughter which of course makes me giggle too. Generally great for calming the crankies!
In case anyone is wondering about the 'educational value' of iPhone apps, my daughter's top rated elementary school is using iPads in the classroom now. As much as I didn't want my daughter getting hooked on video games etc, they actually use the computers a lot in the classroom and the more prepared they are, the better.

There was recently an article in the NY Times about apps for toddlers. Apparently there are a couple of apps for toilet training that get the child wanting to use it. (I think the article said the app tells the child "Time to Go!" and the little one is supposed to get all excited about the whole idea.)
I wouldn't let a 4-6 year old be playing with an iphone or even video games. I think kids need a little bit of life not plugged in. There is absolutely not one thing you can point to that benefits a child that young. You can kid yourself, but that's all you are doing.
