A few homes in Summerport (Windermere area) seem to be suffering thru a sink hole problem. This is terrible for those families.

Does anyone know what insurance options there are if this happens & you hadn't purchased the specific 'sink hole' policy???

A sink hole is very very rare and mostly very isolated issue. It affects only a specific home around hole and it stop grows after settlement. So you do not need to worry about too much. It can be happen anywhere but chances are very low like winning lotto.

I used to do mapping work for a municipality (not in FL) and would regularly see contractors build houses with known sink holes in the back yard. These are sink holes that hadn't really happened yet. We also had a mayor who approved some great looking land on a mountain which the engineering dept say no to. All the houses in that area slid between six inches and a few feet during a heavy rain a few years later. Hers was one of them. (Same mayor who when she got in office, her family's oil company won the bid to supply gasoline to all our fleets.)

This is neither here nor there as far as this sink hole goes.
