Summer is the best time to visit the South. You will see how hot and humid it gets. SC will be too hot if you don't like Florida, even in the Upstate. I suggest VA, Eastern TN, and NW NC.
OP every locality is going to have it's fans and detractors no place is perfect for everyone. Although I like upstate NY and wouldn't mind living there part of the year the state is usually on the bottom of most lists especially for retirees unless it's highest COL or taxes. Currently we live in Virginia and it provides a good balance with living but even we are looking at leaving once I retire as we have no ties to this place.
If your schedule/money allows why not pick those places you think you would like and go stay there for a month or two to get a feel for the day to day of being here. Don't play tourist but see where is the shopping , the hospitals, how is driving at different times of the day. Are there things in the area you want to do or try out? In other words visit like you live there and see what feels right. There is always the option of just heading south for the winter and be a snow bird. Good luck in what you decide were having fun trying to plan it....
While old, it can still give and idea about town/village/school district combinations and rates in comparison: 2007 Tax Rates
Also, places with lower utility rates due to having their own local companies via NYPA: Customers
NYS property taxes should just be with STAR included. It makes the taxes on real estate websites look higher than it really is.
Nevada seems to have the simplest tax structure. More states should follow that simple layout. If you don't own a boat or RV, its seems like you are taxed on 35% of the value of your house and car. No estate tax, no inheritance tax, no state income tax, no city or local tax. 8% sales tax. Simple.
No wonder so many people I talk to from CA are moving into NV

Good point about Nevada and is why it has seen its share of growth. On the flip side, it is known for not having the greatest public schools. So, that is kind of its con in this regard. Nevada falls to last on education ranking

I'm sure you can still get a good education there, but that isn't a good look. With that said, it doesn't matter necessarily if you are retiring.
You won't find me in Nevada. Too many issues. But I still think NV keeps it simple with its tax structure and free spirit. I also think NYS needs to legalize and tax marijuana and also have 2 counties Upstate where brothels are legal. Huge tax revenue would be generated.
We also considered Utah and New Mexico. Utah has a lot of Mormons and from what I understand are not too accepting to outsiders.
Considering SLC is now less than 50% Mormon that's less of an issue these days. Utah is now only 62% Mormon.
