Yesterday I received a ticket in NYC for being parked on a no parking street between certain times, not noticing that I was in the wrong. After reviewing my ticket I noticed that the officer wrote down the wrong color of my car. My car is red and the ticket says orange. Could I win if I write not-guilty? If so, What should my letter say when I send them copies of the title and registration showing that the color car is red.

Maybe you where parked in weird lighting where it looks orange. Its not like he wrote black and your car is red.
You can file an appeal and try to get the ticket dismissed because of factual inaccuracy. You can get an in-person, on-demand hearing during business hours at the finance office for the borough, say 66 John Street, 2nd Floor, for Manhattan. However, it's not as easy to get a dismissal as of late, mainly because of the settlement program. Appealing will likely get you a settlement offer, but if you lose, they will not make it again, and you have to pay what the judge says.
One of my vehicles is a strange color, listed on the title and registration as a derivative of green, but the vehicle looks for all appearances to be a shade of blue, since it's a color with both elements in it, but defined by the manufacturer as green, which is what appears on the title and registration.
So, were I to receive a ticket with this vehicle, I doubt the likelihood of beating it by having blue in the color would be substantiated, especially after viewing a picture of the car in question. A few years ago, yes, it would have been, but given the increased difficulty in beating a ticket (there was an article in The Times about it last year), since the settlement program was implemented, I don't know how successful an outcome could be predicted.

What Henna said. Fight parking tickets when they are not justified.
About a year ago, I went to a restaurant that I usually go to later at night at around 5 or 6 in the evening. The parking nearby is mostly meters, but because I usually go later and you don't need to feed the meter after 7, I forgot to feed it. As I was walking back to my car, I saw a parking agent ticketing it. Know what I did? I politely asked why he was doing it, he pointed out the meter, I said "oops, I screwed up" and accepted the ticket and paid it without reservation. The parking agent was shocked that I did not argue with him, even though I clearly violated the posted rule.
My point is that some - most, in fact - parking tickets are perfectly justified. Just pay it and get on with your life.
It's nearly impossible to get a parking ticket dismissed. The best you can do is plead innocent and explain why. Chances are you will probably pay a reduced fine which IMO is better than paying a full fine or going before a judge and have him slapping on additional fee's.
