what would Christmas be without Tamales.
Got the pork roast cooking and started the red chile cooking.
I cleaned the red chile pods and they are cooking down, and will simmer them with my spices for hours.

Then tomorrow "all Day" will make the Tamales..

I can just now start to smell the aroma of those tamales.

Hope our guests leave a couple for ME..

Happy trails and get those Tamales cooking...

I didn't make them. I bought mine at Posa's in Santa Fe - theirs are just as good as homemade, I think.

Well, this New Mexican is up in Alaska with plenty of snow.... but we do have tamales for Christmas later today. A Mexican student's mom made a dozen for us. I made a red chile sauce. Usually NM friends send bags of red & green chile powder, but alas this year I had to go store to store searching for red. I used the last of my green chile powder yesterday for stacked enchiladas. I miss my New Mexican chile!

I have made tamales at home......but it has been many years. How do you divide it into 2 days work? Sounds like a good idea. I need to find a lower fat way to do it, using olive oil and lean meat. Possible?
PS we love the La Luz area and will be back after the holidays to check out relocation details, housing, etc. we are looking online and don't find many smaller homes in our price range; 65,000 to 95000 dollars.

No...I"m going to do the only sane thing: Buy them!
Cooking is fun (did it professionally for over 30 years), but making tamales is to cooking what re-painting your front door is to painting your whole house. I admire the work of those who do it, but would rather hire their talents and spend my time enjoying the fruits of their labor.
