Pork or beef or even chicken, what is your choice for the coveted Tamale?

My mom made the world's best tamales, but we lost her in August. But my sister in law and my nephew's wife kept up the tradition for Thanksgiving. My GF had to work so couldn't join them. Hopefully they will make them for Christmas. If so I will drive my GF there myself to make sure she learns!
