Plumber- Gas installation?!? (Oceanside, Elmont, Franklin Square: house, construction, general contractor)

If you have pipe dope at every connection, you will SEE it bubble if gas is leaking. It's not that complicated. Just make a good seal like you said. Cut where you need to add the T, add the T, and job well done. I use black pipe not copper so you'll need to thread the pipe where you cut in, of course.
Hell, you could practice on a few pieces of scrap and put water through it to if you were really that worried about not being able to put together some pipe that does not leak. lol.
If you go copper I'm not sure what Schedule is needed for Gas, you may want to check that. Also add a cut-off valve or two in a spot you think works well. I believe the valves with the red plastic handle are NOT the correct ones for gas. Thats what we used but if you're ever going to sell or get any kind of inspector down there.. use the right ones.
You know what? In reality you could probably go down to any plumbing supply store and just ask them how to do it. Doesn't Lowes or Home Depot pride themselves on showing consumers how to do this kind of thing ?

I wouldn't use copper. Not sure if local code here allows for it but even if it did, do a little research. Black pipe only.
I wouldn't ask Lowes or HD for gas line installation advice.
I work for a public utility, and can tell you that when a house goes BOOM, this is usually the reason why. A DIY'er who cut corners to do what seems like an easy job.
