The Bellagio and Wynn buffets aren't what they used to be, but they're still better than the rest.
And as I said. a late lunch is a better value; $25 instead of $40.

Your mother is probably just looking forward to a family meal. Since you have the car, choose a restaurant that you KNOW everyone will enjoy. (the Grand Lux next door at the Venetian/Palazzo has a large menu and walkable). Where would you go typically for your picky eater?

One that I like, and that doesn't get talked about much, is Aria. I has everything people look for at a higher end buffet (King Crab legs, peeled jumbo shrimp, etc., lots of ethic variety, and, for a buffet, good quality. It run $36 weekdays, $40 weekends (with some high end additions, like lobster.) Also, it doesn't usually have the huge line some of the others do. There've been times I've bounce off of Bellagio's buffet because of the line, and trammed over to Aria, and just walked in.

Paris also used to have a good buffet, but I haven't been to it in years. Have they kept it up. The same used to be said about Alladin. Who knows what happened in the Planetoid Hollywood conversion?

Mandalay has the best buffet in terms of value vs cost. $23.99 you get 90% of what Wynn/Bellagio serves.

We loved the Alladin's for the money. I just don't think any are as good as they used to be: double the cost, cut the quality, isn't that the way it is supposed to work?

Our very favorite used to be Caesar's Palace, but haven't been there for years. When we lived in CA and would visit Vegas for a few days, from Sunday to Tues or Wed. we would leave the L.A. area early in the morning, to get to Caesar's in time for Sunday buffet. Then through the years we found the wonderful Sunday buffet at Circus Circus steak house. Boy was I sorry to see that one go. Great price, good service and outstanding food, even though CC is one of our least favorite places.

Last time I was there, they were massively understaffed. Had to wait a long time to get seated, when there were many empty tables (most of which needed to be turned over.) Then there was one waitress for a large chunk of the seating area, trying valiantly to keep up with drink order clearing diners plates and turning over tables, but she couldn't quite make it.

If they staffed adequately, it would be a good buffet.

I say figure out where you want to go and let the 19 year old deal with it. I have a nephew who is also a picky eater. Hunger and watching everyone else eating and having a good time cure his problems.
