You can also break up the trip by spending a night or two in New Orleans.
Is New Orleans safe?

Panamacity beach is excellent.. its very far from Houston but you wont regret the drive.. If not try flying to panama city beach.. Blue/clear water, many water sports/rides.. excellent place to relax..

Galveston, south padre is 20% of Panama city beach..

Yes. The normal places tourists stay are very safe.

I spend a lot of time in New Orleans. Never had a problem. It's safe as long as you use common sense.

Looks beautiful. Any suggestions on where to stay that is already not booked?

I agree. If one takes beauty and crowds into consideration, this area is the top choice among those presented to this point. The next tier, IMO, would include Orange Beach and Gulf Shores (tstone's suggestions). The third tier would include Destin and Pensacola, and Panama would be last among the Florida and Alabama beaches mentioned so far. I've been to all of the Florida and Alabama beaches we each listed above. I would rank Panama City above Galveston . I've never been to Port Aransas, nor the South Padre area.

I'm looking for nice beaches, good food for my wife and 6 old months daughter nothing too hectic.
When my son was about that age we went to Rockport, TX and loved it
Their beach has almost zero waves and is very shallow, perfect for toddlers.
