Unless I knew them personally, no I would not. I would not be willing to assume the risk.
You're right ---I don't know them outside of this project and I am sure there are plenty of insured and licensed subcontractors out there that might want to do the work.

If someone working for you doesn't have insurance and were to sustain an injury which wouldn't allow him to work ever again, you will support him until the day he dies.

Thank you for the reality of that. Yep, you're right on that one. Lucky or not I've chosen to look for other subcontractors that are licensed and insurance to do the drywall and framing...and I'm finding there are plenty of them needing and wanting work. Unlicensed and Uninsured --- not worth the risk.
For those of you following this saga I thought you would get a chuckle out of this:
I told the drywall/framing guys (they work as a team) that I could not hire them to do the job since they could not produce insurance, etc.
He (the guy who seemed to be the leader of the duo) let me know that he would be sending me a bill for preparing a quote, referring the electrician and HVAC guy to me, and drawing up a plan. I originally provided him the plan that I had drawn by my architect, but he wanted to do his own. Did I ever agree to pay him for this ---- NOPE!!!
For all you GC out there that have to deal with these dim-wits my hat goes off to you!!!
