I like #2 with the backsplash. FWIW, I put Silestone (Quartz) when we built in 2007. The contractor didn't even know what it was--he thought everybody should have granite. I still love my Silestone!
Just an observation. Remember most backsplashes take up a small space. The predominant color space is generally in the cabinets and countertop. However, much like a belt in women's clothing, a belt style and color and pull it all together or stand out like a sore thumb. You might settle on the cabinets (seems you already have) and the countertop first. Then see what backsplash does best for what you've chosen.
