Many people are incorrect. Celiac isn't caused by sensitivity to gluten. Celiac is an autoimmune disease, which causes an intolerance to gluten. The cause of CD is unknown. BTW - CD isn't an allergy to gluten. Allergies can go away by themselves, or be treated with antihistimines. The reaction of gluten on people with Celiac Disease is not allergic. It doesn't trigger histimine production. Rather, it damages the small intesting, the little "hairs" that serve as a filter to absorb nutrients into the body. Gluten destroys those hairs (aka villi) and renders the small intestine unable to do its job. Osteoporosis is a common potential risk for people with Celiac, who continue to consume gluten. Intestinal lymphoma is another one.
Also, gluten isn't used in wheat. Gluten is a byproduct of wheat. There is a very limited number of things where gluten exists naturally; they are exclusively grass grains such as wheat, rye, and barley.
Unfortunately, even some pill manufacturers use gluten to bind pills, so someone with Celiac has to be very careful about taking medications. Even the tiniest amount of gluten in their digestive system will cause damage. The damage can heal if it's not severe, as long as the person returns to 100% gluten-free long enough for the healing to take place. But damaging the intestine and letting it heal, over and over and over again, takes its toll. That's why people with CD tend to be vehement and fanatical about not getting anywhere near gluten - wheat products, reading ingredients labels carefully on everything including deli meats and ANYTHING processed.
Sometimes my body produces too much bile if I eat too much or eat something greasy. It's very similar to the symptoms someone gets when they have their gallbladder removed, except I still have mine. The diarrhea is yellow and burns like hell. I take Colestid everyday, and it keeps it in check 90% of the time.
