Most tuna at sushi restaurants or served as sashimi is maguro which is blue-fin tuna or yellow-fin tuna(ahi). Canned tuna is cooked and usually cheaper and more plentiful and smaller skipjack tuna or albacore tuna(white meat). Which can be served as sashimi/sushi as well, but it's cheaper and often served seared instead of raw. Most of the time though, when you hear tuna sushi you're talking about blue-fin tuna most commonly. So most of the time it's not even the same type of tuna.
