Mom made her oven-fried chicken with instant mashed. She alternated with pulverized Ruffles Potato chip crumbs. We also grew up not quite understanding that most people ate -their- Ruffles out of the bag, and not stuck to chicken skin via a slather of mayonnaise.

Well, you have given me a great idea! I digress, but I have always wanted to replicate a Japanese restaurant dish called Katsudon as I have had it prepared in a particular venue. the recipe calls for potato starch and my attempts did not come out as planned. I think I will try to use the instant mashed instead of potato starch for the breading. Thanks!
