NO
you won't find one around here--maybe working cattle ranch and that is no resort...or summer camp for kids in the hill country like around Kerrville--but don't think there are any in DFW area

we vacationed at resort across from Mobile in Alabama--was independent now owned by Marriott--there were ratty barracks like for the teens/YA that worked there--don't know if that practice is still happening--

why do you think those hotels would offer housing to employees as part of an employment package--I know a couple of people who work at Gaylord and they do not pay that well anyway--free room would be out of the question
would you expect a Holiday Inn or a Hilton to offer rooms to employees

resorts like the Grand Hotel on Mackinac Island in Michigan have rooms for their summer help because many of them are foreign workers who come for the season and have no transportation and the island is isolated--frankly anything to rent would be way out of the price range of what the summer workers are paid so if the hotel does not provide quarters, they can't GET workers...
that is not the situation around DFW anyway--or San Antonio

the only places I can think of that might do something like that would be summer camps like those in the hill country
check out this link with list of summer camps--
Texas Tech University :: Career Center ::
or this one
Summer Camp Jobs & Employment - Camp Channel Job Board for Camp Counselors

but these are not resorts like Cancun's...or the one in Dirty Dancing...
